Founded in 1942, Cai'ashui Mutton Restaurant started as a small meat restaurant by the bank of Meihua Bridge in the old street of Meicun Town of Wuxi city, which only opened in winter and closed right after the Spring Festival. Thanks to the mutton cooking skills, which were passed down from generation to generation, and the high-quality goat, the mutton is not smelly, yet is fresh and nutritional, making Cai'ashui highly-regarded and well-received in Wuxi.
